Scrambled Eggs w Fresh Herbs, Dijon & Tomato

 

 

Scrambled Eggs with Fresh herbs, Dijon and Tomato

6 eggs
1-2 tablespoons mixed finely chopped herbs (basil, tarragon, thyme, rosemary, parsley)
3-4 tablespoons chopped green onion or chives (save 2 tablespoons for sprinkling after done)
2 tablespoons of cream or half and half
1-2 tablespoons Dijon mustard
3/4 cup chopped tomatoes (no seeds)
Pinch of Salt & Pepper
Melted Butter

Whisk eggs in a bowl, add all the ingredients and mix together. Add to a medium high preheated pan with melted butter. When you add the eggs in, turn down the stove top to medium and scramble eggs until desired wellness.
